1kg Brussels sprouts, outer leaves removed
Sea salt and freshly ground black pepper
1–2 tsp olive oil
200g pancetta, cut into lardons
200g vacuum-packed chestnuts
2 lemons

WTF is pancetta and how is it cut into lardons? Lardons do not sound appealing at all. Is that anything like a clingon?  :o    :pukeface:

Pancetta is a type of bacon and a lardon is cubed, I think.  I bought the pancetta already cubed at one of our finer grocery stores.

That's my kind of shopping.  I wouldn't be caught dead at a mall this Friday which is why I'm riding as far away as I can....at least until I get to the bay.

My department had a retirement party/lunch for me here today.

They even had a cake with a big full face mc helmet on it, made out of icing of course. The helmet had a mohawk on it, I didn't mind since it was delicious.

 :D

I know it J! They were all waiting for me when I went upstairs. As I entered the room everyone stood up and gave me a round of applause. I was so touched that I almost didn't know what to say.  :D

They're taking me out for lunch and drinks a couple times before I leave too.    :)
